Chocti Chocolate Crepes

  • 00 1.5 cups Coconut Milk
  • 01 3 Cage-free Eggs
  • 02 3 tbsps Reminded Organic Sugar
  • 03 4 tbsps Original or Vanilla Bean Ghee
  • 04 .5 cup Brandy or Apple Juice
  • 05 1 tsp Vanilla Extract
  • 06 1 cup All-Purpose Flour
  • 07 Chocti
  • 00 In a blender, combine milk and eggs.
  • 01 Mix on medium-high speed until foamy, about 10 seconds.
  • 02 Turn down blender to low and remove top middle of cap.
  • 03 Add sugar and salt while blender is still on low.
  • 04 Keep on and add ghee, brandy, and vanilla.
  • 05 Turn blender off.
  • 06 Add flour all at once and blend until just combined.
  • 07 Place cru00eape pan over medium high heat.
  • 08 Add ghee and spread with spatula for even spread.
  • 09 With a silicone soup spoon, pour about 1/4 cup into the pan and with the bottom of the silicone spoon in tiny circles slowly spread out slowly.
  • 10 Alternatively, lift and and tilt and turn to spread.
  • 11 When bubbles appear and pop run spatula along sides to lift sides the shimmy in the center and quickly flip.
  • 12 Allow to cook for another minute or less.
  • 13 Remove from heat and while hot take 1.5 tablespoons of Chocti and spread in circles.
  • 14 Garnish as desired.
