Cinnamon Vanilla Cranberry Muffins

Ingredients
  • 00 1/2 cup Gluten-Free All Purpose Flour
  • 01 1 tsp Cinnamon
  • 02 3/4 tsp Baking Powder
  • 03 1/8 tsp Baking Soda
  • 04 1/4 cup Ghee Oil
  • 05 1 Egg
  • 06 3 tbsps Coconut Sugar
  • 07 1 tsp Vanilla Extract
  • 08 1/4 cup Vanilla Greek Yogurt
  • 09 1 pinch Sea Salt
  • 10 1/2 cup Fresh Cranberries
  • 11 3 tbsps Vanilla Bean Ghee For the Streusel
  • 12 1 tbsp Coconut Sugar For the Streusel
  • 13 1 tbsp Gluten-Free Flour For the Streusel
  • 14 1/4 tsp Cinnamon For the Streusel
Preparation
  • 00 Preheat oven to 375 F.
  • 01 Line a cupcake pan with 6 liners.
  • 02 Combine wet ingredients into a bowl.
  • 03 Next, combine dry ingredients into a separate bowl, and then mix the two together.
  • 04 Add mixture to each cup.
  • 05 For the streusel, combine all ingredients, until clumpy, and then top each muffin with crumbles.
  • 06 Bake for around 18-20 minutes, or until toothpick comes out clean.
