Ingredients
  • 00 1/4 cup Fourth & Heart Ghee Plain or California Garlic
  • 01 2 Medium-Sized Acorn Squash
  • 02 1 Medium Onion Roughly Chopped
  • 03 2 Cloves of Garlic Roughly Chopped
  • 04 4 cups Bone or Vegetable Broth
  • 05 2 tbsps Harissa Paste
  • 06 Salt
  • 07 Pepper
  • 08 Rosemary For Garnish
Preparation
  • 00 Preheat your oven to 350 degrees F.
  • 01 Cut acorn squash and scoop out seeds.
  • 02 Place on a parchment-lined baking sheet.
  • 03 Melt 1/4 cup of ghee and pour melted ghee evenly over squash.
  • 04 Roast for 40 minutes, or until tender.
  • 05 Heat remaining tablespoon of ghee in a Dutch oven.
  • 06 Add chopped onions and garlic and stir over a medium heat for a couple of minutes.
  • 07 Add roasted squash and harissa and continue to stir for another minute or two before covering with broth.
  • 08 Bring to a simmer and allow to cook for 15-20 minutes.
  • 09 Use a hand mixer or transfer contents to a high-speed blender and puree until smooth.
  • 10 Season with salt and pepper.
  • 11 Serve with fresh or dried rosemary as a garnish.
