Breakfast Frittata

Ingredients:
- 6 eggs
- 2 tbsp 4th & Heart garlic ghee
- 1 red bell pepper, finely chopped
- 8 Aspargus speras, finely sliced
- 1 cup of mushrooms, finely chopped
- 1 cup of pinach, chopped
- 1 cup of cherry tomatoes
- Salt & Pepper
- 1 tbsp of Paprika
- 1 tbsp of oregano

 

Instructions:

Preheat oven to 350 degrees F. While the oven preheats, spread 4th & heart ghee in an oven-safe, medium, nonstick skillet. Add the apsparagus, mushrooms, bell peppers, tomatoes and spinach. Add seasoning and toss ingredients to coat. Scramble the eggs and then add eggs to skillet. Cook egg mixture on stove for about 5 mins over medium heat. Remove from heat, and add crumbled goat cheese over mixture and place in stove to bake. Bake for about 12 mins, until cooked through. Remove from oven and garnish with fresh herbs just prior to serving.
