Creamy Whipped Ricotta

Starting today off strong with a recipe for whipped ricotta from our friend, @savsdishWondering how to use this fluffy spread?! Try topping a slice of toast with whipped ricotta, ripe peaches, and some fresh basil or just find your favorite crackers and dig in!

- 1 16 oz tub of whole milk ricotta
- Juice from 1 lemon
- 2 T finely minced fresh herbs —  we used thyme, mint, basil + parsley but anything will do
- 1.5 T melted 4th & Heart Vanilla Bean Ghee
- big pinch of salt + pepper to taste

Begin by crushing your pine nuts into a paste by putting them in a sandwich bag + using a rolling pin or meat tenderizer to crush. Add all ingredients to a bowl + using a hand mixer, blend until it starts to form a whipped texture. Spread on a plate + garnish with fresh herbs, lemon twist, pine nuts + red pepper flakes if you wish!
