Thoroughly wash your seeds with water and drain through a colander.
Try and dry them as much as you can (you can even spread them out onto a baking sheet and let dry overnight). You can use a paper towel; however, some seeds may stick a little! You'll just have to pluck them off when done.
Melt 2 Tbsp of 4th & Heart Ghee and pour over seeds onto baking sheet. [Note there may be some strands of pumpkin you weren't able to get off of the seeds BUT THAT'S OK!! These little pieces bake along with the seeds and become crunchy and full of flavor]
Roast at 350 degrees for about an hour.
Toss them around every 10 minutes or so to ensure they are baking evenly and re-season with nutritional yeast, more garlic, another drizzle of ghee.
Finish with a heavy sprinkle of fleur de sel when they are done.
