Spiced Ghee Poached Shrimp

Ingredients for Spiced Ghee:
- 4 Tbsp + 1 Tbsp 4th & Heart Original Recipe Ghee
- 1 1" piece ginger, peeled, crushed
- 2 garlic cloves, crushed
- 3 chiles de árbol, broken into pieces, seeds removed
- 1 chipotle chile, broken into pieces
- 1 cardamom pod, crushed
- 1 whole star anise
- 1 1" cinnamon stick
- 4 whole cloves
- 2 tsp. coriander seeds
- 1 tsp. cumin seeds
- 1 tsp. black peppercorns
Ingredients for Shrimp Marinade:
- Juice of 1 lime
- 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt
- 1 tsp. Kashmiri chile powder or paprika
- ¼ tsp. Turmeric
- 1 lb. large shrimp, peeled, deveined, preferably tails left on
Directions:
- Add 4 tablespoons of ghee to a skillet and heat on medium-low. Add all ingredients for spiced ghee to the skillet and let the spices and aromatics bloom until fragrant (about 3-5 minutes). Strain the ghee and spices mixture over a measuring cup and set toasted spices and strained ghee aside.
- Add strained ghee, toasted spices (except the cinnamon stick), lime juice, salt, chile powder, turmeric, and a splash of water to a blender to make the shrimp marinade. Transfer to a medium bowl; add shrimp and toss to coat. Let sit for 30 minutes.
- Heat remaining 1 tablespoon of Original Recipe ghee in a large cast iron skillet on low. Add shrimp to skillet and cook, turning halfway through, until opaque throughout and pink, about 4 minutes total. Using a slotted spoon, divide shrimp among plates and drizzle 1–2 Tbsp. warm ghee from the skillet over each plate.
