Apple Pie

What You’ll Need:

  • For the Pie Crust
    • 2 1/2 cups all-purpose flour
    • 1/2 teaspoon salt
    • 1 cup 4th & Heart Ghee Sticks, Unsalted, Cubed & Cold
    • 1 cup ice water
  • For the Pie Filling:
    • 8-10 cups apple slices (peeled, in 1/4" slices)
    • 2 tablespoons 4th & Heart Unsalted Ghee Sticks, melted
    • 2 tablespoons lemon juice
    • 1/4 cup all-purpose flour
    • 1/4 teaspoon ground cloves
    • 1/4 teaspoon ground nutmeg
    • 1 1/2 teaspoons ground cinnamon
    • 1/4 teaspoon ground ginger
    • 1/2 cup granulated sugar
    • 1 teaspoon vanilla extract

Instructions:

  1. Make the pie crust by combining flour and salt; cut in ghee until crumbly (we use the food processor). Gradually add ice water, mixing until dough holds together when pressed. Divide dough in half and shape into two discs. Wrap and refrigerate 1 hour or overnight.  
  2. On a lightly floured surface, roll out 1 disc of dough to 1/8" circle, transfer to a 9-inch pie plate. Set aside. Preheat the oven to 400 degrees Fahrenheit. 
  3. Make the filling by combining apples, melted ghee, lemon juice, flour, spices, sugar and vanilla extract together in a large bowl until thoroughly combined. Set filling aside as the oven preheats, allowing the apples to get juicy. 
  4. Add filling to the prepared pie plate, then roll out the remaining dough and place over filling. Trim, seal and flute edges, cut slits in top to allow steam to escape while baking. 
  5. Place pie plate on a baking sheet and bake for 20 minutes. Turn the temperature down to 375 degrees Fahrenheit and bake for an additional 30-35 minutes. Tip: Consider adding a pie crust shield made from tin foil to the edges after the first bake. This helps shield the top of the pie to prevent edges from browning too quickly. 
  6. Allow the pie to cool for 3 full hours at room temperature before serving to allow the insides to thicken. Serve with whipped cream or vanilla ice cream and enjoy.
