Better Butter, Better Steak

What You’ll Need:

Instructions:

  1. Prepare the steak by bringing it to room temperature (20-30 minutes prior to cooking) and pat dry.
  2. In a small bowl, combine 4 Tbsp of ghee, parsley, lemon pepper, and flake sea salt. Mix well until all ingredients are combined, and chill in the refrigerator until solid.
  3. Preheat a cast iron skillet over medium- to medium-high heat. Add the remaining 1 Tbsp of ghee to evenly coat the pan.
  4. Place the steak in the skillet. Sear on both sides for about 3-4 minutes per side. If the steak is thick, use tongs to sear the edges as well. Sear until the internal temperature reaches your preferred level of doneness.
  5. Remove the steak from the pan and let it rest for 5 minutes to allow the juices to redistribute in the meat.
  6. Transfer the rested steak to a serving plate or cutting board. Place a generous dollop of the chilled herb ghee on top of the hot steak.
  7. Allow the herbed ghee to melt slightly over the steak before serving.
  8. Use a meat thermometer to ensure the steak is cooked to your desired temperature. Adjust cooking times based on the thickness of the steak and preferred level of doneness.
