Better Butter, Better Steak

What You’ll Need:
- 1 steak, any cut
- 5 Tbsp 4th & Heart Ghee Unsalted Stick, softened
- 4 tsp parsley, finely chopped
- ½ tsp lemon pepper seasoning
- ¼ tsp flake sea salt
Instructions:
- Prepare the steak by bringing it to room temperature (20-30 minutes prior to cooking) and pat dry.
- In a small bowl, combine 4 Tbsp of ghee, parsley, lemon pepper, and flake sea salt. Mix well until all ingredients are combined, and chill in the refrigerator until solid.
- Preheat a cast iron skillet over medium- to medium-high heat. Add the remaining 1 Tbsp of ghee to evenly coat the pan.
- Place the steak in the skillet. Sear on both sides for about 3-4 minutes per side. If the steak is thick, use tongs to sear the edges as well. Sear until the internal temperature reaches your preferred level of doneness.
- Remove the steak from the pan and let it rest for 5 minutes to allow the juices to redistribute in the meat.
- Transfer the rested steak to a serving plate or cutting board. Place a generous dollop of the chilled herb ghee on top of the hot steak.
- Allow the herbed ghee to melt slightly over the steak before serving.
- Use a meat thermometer to ensure the steak is cooked to your desired temperature. Adjust cooking times based on the thickness of the steak and preferred level of doneness.
