Breakfast Frittata

What You’ll Need:
- 6 eggs
- 2 Tbsp 4th & Heart Garlic Ghee
- 2-3 cups of your favorite vegetables, diced (e.g., bell peppers, asparagus, mushrooms, onions, cherry tomatoes, or broccoli)
- 1 cup of spinach, chopped
- ¼ cup of goat cheese, crumbled
- 1 Tbsp paprika
- 1 Tbsp oregano
- Salt and pepper
Instructions:
- Preheat oven to 350 degrees F.
- Melt the garlic ghee in an oven-safe, medium, non-stick skillet. Add the diced veggies to the pan and sauté for 2-3 minutes. Once softened, add the spinach and cook for an additional 1-2 minutes. Add seasonings and toss to coat.
- Break the eggs into a bowl and whisk with a fork until well mixed. Add eggs to the skillet, ensuring all veggies are covered. Depending on the size of your eggs, you may need to add additional eggs.
- Cook the egg mixture on the stove for 5 minutes over medium heat.
- Remove the egg mixture from heat and add crumbled goat cheese to the top of the mixture.
- Place the egg mixture in the oven and bake for 12 minutes until cooked through.
- Remove from oven and garnish with fresh herbs just prior to serving.
