Breakfast Frittata

What You’ll Need:

  • 6 eggs
  • 2 Tbsp 4th & Heart Garlic Ghee
  • 2-3 cups of your favorite vegetables, diced (e.g., bell peppers, asparagus, mushrooms, onions, cherry tomatoes, or broccoli)
  • 1 cup of spinach, chopped
  • ¼ cup of goat cheese, crumbled
  • 1 Tbsp paprika
  • 1 Tbsp oregano
  • Salt and pepper

Instructions:

  1. Preheat oven to 350 degrees F.
  2. Melt the garlic ghee in an oven-safe, medium, non-stick skillet. Add the diced veggies to the pan and sauté for 2-3 minutes. Once softened, add the spinach and cook for an additional 1-2 minutes. Add seasonings and toss to coat.
  3. Break the eggs into a bowl and whisk with a fork until well mixed. Add eggs to the skillet, ensuring all veggies are covered. Depending on the size of your eggs, you may need to add additional eggs.
  4. Cook the egg mixture on the stove for 5 minutes over medium heat.
  5. Remove the egg mixture from heat and add crumbled goat cheese to the top of the mixture.
  6. Place the egg mixture in the oven and bake for 12 minutes until cooked through.
  7. Remove from oven and garnish with fresh herbs just prior to serving.
