Creamy Rosemary Mashed Potatoes

What You’ll Need:
- 2 lbs. Potatoes
- ¼ Cup Heavy Whipping Cream
- ½ Cup mozzarella Cheese, grated
- 3 Tbsp. Garlic Ghee
- 1 Tbsp. Fresh Rosemary, chopped
- ½ Tbsp. Salt
- ½ Tbsp. Pepper
Instructions:
- Peel potatoes and rinse in cold water, cut into cubes.
- In a large pot, bring 5 quarts of water to boil, and add your potatoes.
- Cook until easily pierced with a knife (20-25 minutes).
- Drain your potatoes and transfer to a large mixing bowl. Add garlic ghee, heavy whipping cream, and mozzarella cheese. With a hand mixer, break down the potatoes until smooth.
- Add fresh rosemary, salt, and pepper. Mix together and serve immediately.
