Creamy Rosemary Mashed Potatoes

What You’ll Need:

  • 2 lbs. Potatoes
  • ¼ Cup Heavy Whipping Cream
  • ½ Cup mozzarella Cheese, grated
  • 3 Tbsp. Garlic Ghee
  • 1 Tbsp. Fresh Rosemary, chopped
  • ½ Tbsp. Salt
  • ½ Tbsp. Pepper

Instructions:

  1. Peel potatoes and rinse in cold water, cut into cubes.
  2. In a large pot, bring 5 quarts of water to boil, and add your potatoes.
  3. Cook until easily pierced with a knife (20-25 minutes).
  4. Drain your potatoes and transfer to a large mixing bowl. Add garlic ghee, heavy whipping cream, and mozzarella cheese. With a hand mixer, break down the potatoes until smooth.
  5. Add fresh rosemary, salt, and pepper. Mix together and serve immediately.
