Ghee Rosemary Roasted Carrots with Honey Glaze

  1. Preheat the oven to 400 degrees F.
  2. Place the peeled carrots in a single layer in a baking pan or dish.
  3. In a small bowl, melt the ghee. Once melted, mix in the honey, rosemary, salt, and pepper.
  4. Pour the mixture over the carrots and toss to coat.
  5. Place the carrots in the oven and bake for 30-40 minutes or until carrots are fork tender and browned. Note that the roasting time will vary depending on the size of the carrots.
  6. Remove from the oven to cool for 1-2 minutes and serve!
