Hot Honey Chicken Caesar Salad

A twist on the classic, this salad will have you coming back for its irresistible sweet heat.
What You’ll Need:
For the Crispy Baked Chicken:
- 4th & Heart Ghee Spray
- 4 large chicken breasts, trimmed and pounded to even thickness (about ¾ inch)
- 1 1/2 cups gluten-free crackers or panko breadcrumbs
- 1 Tbsp ground flaxseed
- 2 teaspoons garlic powder
- 2 teaspoons paprika
- 1 teaspoon sea salt
- Freshly cracked black pepper, to taste
- 2 large eggs, beaten
- 3 Tbsp melted ghee (for brushing)
For the Hot Honey:
- 1/4 cup honey
- 1/2 teaspoon red pepper flakes
- 1 Tbsp apple cider vinegar
- Pinch of sea salt
For the Caesar Salad:
- 9 oz lettuce of choice: baby butterhead, kale, or romaine, chopped
- 3/4 cup Caesar dressing (store-bought or homemade)
- 1/2 cup shaved Parmesan cheese
- Fresh lemon wedges
Instructions:
- Preheat the oven to 425°F. Line a baking sheet with parchment paper and place a wire rack on top. Spray the rack with ghee, and set aside.
- In a food processor or blender, pulse the crackers, flaxseed, garlic powder, paprika, salt, and pepper until the mixture reaches a crumbly, flour-like consistency. Transfer to a shallow bowl. Place the beaten eggs in a separate shallow bowl.
- Pat the chicken breasts completely dry with paper towels. Dip each in the egg wash, coating completely, then let excess drip off. Press into the cracker mixture, coating both sides thoroughly and pressing to adhere.
- Place the breaded chicken on the prepared rack, and brush generously with melted ghee. Bake for 20-25 minutes or until golden brown, crispy, and internal temperature reaches 165°F. No need to flip.
- Remove chicken from the oven and let rest for 3-4 minutes, then slice into strips.
- While the chicken cools, heat a small saucepan over medium-low. Combine the honey, red pepper flakes, vinegar, and salt. Warm for 2-3 minutes, stirring occasionally, until everything is incorporated and slightly reduced. Remove from heat and set aside.
- Divide the greens among 4 bowls. Top each with sliced crispy chicken, and sprinkle with shaved Parmesan. Drizzle with hot honey, and finish with fresh cracked black pepper. Serve with lemon wedges on the side. Enjoy!
