Shakshuka

What You’ll Need:

  • 1 Tbsp 4th & Heart Original Recipe Ghee
  • 1 lb. ground no-sugar-added breakfast sausage
  • 1/3 cup diced onions
  • 1 large red bell pepper, diced
  • 1/2 cup chopped fresh cilantro + 1 Tbsp for garnish
  • 1 15 oz can unsalted tomato sauce
  • 2 cups spinach
  • Salt + pepper to taste
  • 4-6 large eggs
  • 2 Tbsp feta or goat cheese (optional)
  • 1/2 small avocado, sliced (optional)
  • 4-6 slices sourdough bread of choice (optional, but highly recommended)

Instructions:

  1. Add ghee to a large pan and melt through on medium heat (1 minute).
  2. Add in diced onions, diced red bell pepper, salt, and pepper, and sauté for 5-7 minutes on medium heat.
  3. Add in breakfast sausage and cook for about 5-7 minutes on medium heat.
  4. Add tomato sauce, cilantro, spinach, and cook until the spinach is wilted on medium heat.
  5. Make 4-6 wells by moving aside the sausage mixture.
  6. Crack 4-6 eggs into the wells.
  7. Cook for about 10-15 minutes on medium-low heat (depending on how done you’d like your eggs).
  8. Top with feta or goat cheese, fresh cilantro, and avocado slices.
  9. Dip your favorite toasted sourdough bread into the mixture and enjoy!
