Shrimp Scampi

What You’ll Need:

  • 2 Tbsp 4th & Heart Original Ghee
  • 2 Tbsp Extra Virgin Olive Oil
  • 2 garlic cloves, minced
  • ½ cup dry white wine (we used a pinot grigio)
  • ¾ tsp kosher salt, to taste
  • 1/8 tsp crushed red pepper flakes
  • Dash of freshly ground black pepper
  • Freshly squeezed juice of ½ lemon
  • 1 ¾ pounds large or extra-large shrimp, shelled, cleaned, deveined
  • 1/3 cup chopped parsley

Instructions:

  1. In a large skillet over medium heat, melt ghee with olive oil.
  2. Add garlic and sauté until fragrant, about one minute.
  3. Add dry white wine, salt, red pepper flakes, and black pepper.
  4. Bring to a simmer, letting the liquid reduce by half, about 2-4 minutes. Add in the lemon juice.
  5. Add shrimp and sauté until they just turn pink, roughly 2-4 minutes.
  6. Serve over your choice of pasta or accompanied by your choice of bread.
  7. Garnish with parsley and enjoy!
