Steak with Truffle Ghee

What You’ll Need:

  • 4 Tbsp 4th & Heart Truffle Ghee, found exclusively at Whole Foods Market
  • 4 (6 oz) New York strip steaks
  • Sea salt and black pepper, to taste

Instructions:

  1. Prepare the steak by bringing it to room temperature (20-30 minutes prior to cooking) and pat dry. Season with salt and pepper, to taste.
  2. Preheat the oven to 350° F.
  3. Preheat an oven-safe cast iron skillet over medium- to medium-high heat. Add 2 Tbsp of truffle ghee to evenly coat the pan.
  4. Place the steak in the skillet. Sear on both sides for about 3-4 minutes per side. If the steak is thick, use tongs to sear the edges as well. 
  5. Once seared, place pan with steaks in the oven, allowing them to bake 8-10 minutes until firm and reddish-pink in the center. Use a meat thermometer to ensure the steak is cooked to your desired temperature. Adjust cooking times based on the thickness of the steak and preferred level of doneness.
  6. Remove the steak from the oven and let it rest for 5 minutes to allow the juices to redistribute in the meat.
  7. Transfer the rested steak to a serving plate or cutting board. Place the final 2 Tbsp of Truffle ghee on top of the hot steak, allowing it to melt slightly over the steak before serving.
