Truffle Risotto

What You’ll Need:

  • 1 quart chicken broth
  • 3 Tbsp 4th & Heart Truffle Ghee, found exclusively at Whole Foods Market
  • 1/2 medium onion, minced
  • 1 1/4 cups Arborio rice
  • 1/2 cup white wine
  • 1/4 cup hot water
  • 1/3 cup grated parmesan cheese
  • 1 tsp milk
  • Salt and pepper to taste
  • Parmesan cheese for garnish

Instructions:

  1. Heat chicken broth in over medium-low heat until completely warmed through.
  2. Heat 1 tablespoon 4th & Heart Truffle Ghee in large pan. Add onion and sauté for 1-2 minutes. Stir in rice until coated, then cook about 1 minute, stirring constantly.
  3. Pour wine into rice mixture, letting cook until absorbed, stirring occasionally. Add one ladle warmed broth and cook, stirring constantly, until broth is absorbed. Continue adding broth and stirring, one ladle at a time, until completely absorbed and rice is tender. 
  4. Add parmesan, 2 tablespoons 4th & Heart Truffle Ghee, and milk, and stir until incorporated. Season with salt, pepper, parmesan to taste. Serve with preferred protein as main dish, or as side.
