Healthy Banana Walnut Muffins
It's time to make #BakingWithGhee part of your weekend routine. These Banana Walnut Muffins are easy to throw together, serve as a great on-the-go breakfast, and are kid-friendly, to boot!
Ingredients:
- 1.5 cups mashed, ripe banana
- 2 eggs
- ½ tsp vanilla extract
- ½ c 4th & Heart Vanilla Bean Ghee
- ½ tsp cinnamon
- ¼ tsp nutmeg
- 1 tsp baking powder
- 1 tsp baking soda
- Pinch of salt
- 2 c gluten-free all-purpose flour
- ½ c walnuts, chopped
- Optional: This recipe is no-sugar-added, but feel free to add 1/2 c of the sugar of your choice to sweeten them up a bit!
Directions:
- Mash bananas in a large bowl, then add eggs, vanilla, and Vanilla Bean Ghee and mix.
- Add cinnamon, nutmeg, baking powder, baking soda, a pinch of salt, and flour to the bowl. Mix until combined.
- Stir in chopped walnuts.
- Using two spoons or an ice cream scoop, transfer batter to lined muffin tins (Pro Tip: Use 4th & Heart Ghee Oil Spray to make any surface non-stick in a matter of seconds!)
- Bake at 350ºF for 20-25 minutes. Cool for 5 minutes on a cookie wrack before digging in!
