Healthy Banana Walnut Muffins

What You’ll Need:
- 1 ½ cups mashed, ripe bananas
- 2 eggs
- ½ teaspoon vanilla extract
- ½ cup 4th & Heart Vanilla Bean Ghee
- ½ tsp cinnamon
- ¼ tsp nutmeg
- 1 tsp baking powder
- 1 tsp baking soda
- Pinch of salt
- 2 cups preferred flour
- ½ cup walnuts, chopped
- Optional: ½ cup sweetener of your choice (granulated sugar, honey, or agave)
Instructions:
- Mash bananas in a large bowl. Then add eggs, vanilla, and vanilla bean ghee. Mix.
- Add cinnamon, nutmeg, baking powder, baking soda, a pinch of salt, and flour to the bowl. Mix until combined.
- Stir in chopped walnuts.
- Using two spoons or an ice cream scoop, transfer batter into lined muffin tins. (Pro Tip: Use 4th & Heart Ghee Oil Spray to make your surface non-stick in a matter of seconds!)
- Bake at 350 degrees for 20-25 minutes.
- Remove from oven and cool for 5 minutes on a cookie rack before digging in!
