Healthy Banana Walnut Muffins

What You’ll Need:

  • 1 ½ cups mashed, ripe bananas
  • 2 eggs
  • ½ teaspoon vanilla extract
  • ½ cup 4th & Heart Vanilla Bean Ghee
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • 1 tsp baking powder
  • 1 tsp baking soda
  • Pinch of salt
  • 2 cups preferred flour
  • ½ cup walnuts, chopped
  • Optional: ½ cup sweetener of your choice (granulated sugar, honey, or agave)

Instructions:

  1. Mash bananas in a large bowl. Then add eggs, vanilla, and vanilla bean ghee. Mix.
  2. Add cinnamon, nutmeg, baking powder, baking soda, a pinch of salt, and flour to the bowl. Mix until combined.
  3. Stir in chopped walnuts.
  4. Using two spoons or an ice cream scoop, transfer batter into lined muffin tins. (Pro Tip: Use 4th & Heart Ghee Oil Spray to make your surface non-stick in a matter of seconds!)
  5. Bake at 350 degrees for 20-25 minutes.
  6. Remove from oven and cool for 5 minutes on a cookie rack before digging in!
