Garlic-Ghee Steak Bites & Charred Broccolini

What You'll Need:
- ¼ cup low sodium soy sauce
- 4 Tablespoons 4th & Heart Salted Ghee Butter, melted and cooled
- 3 cloves garlic, minced
- 2 lbs sirloin steak, trimmed, and cut into 1-inch cubes
- 2, 10-oz packages fresh broccolini, ends trimmed
- 2-3 lemon wedges
- 4th & Heart Ghee Spray
- 3-4 Tablespoons chopped, flat-leaf parsley
Instructions:
- In a large bowl, mix together the soy sauce, melted ghee, and garlic. Add the meat,
tossing to coat. Let sit on the counter for 30 minutes to come to room temperature. - Meanwhile, preheat the oven to 475 F, and arrange the broccolini across a large, metal baking sheet. Spray both sides generously with ghee and sprinkle with freshly cracked pepper. Transfer to the oven, and cook for 8 minutes, then use a low broil for the final 2-3 minutes. Watch closely to prevent burning.
- Preheat a large cast-iron or heavyweight skillet over high for 2 minutes, until very hot. Transfer half of the steak bites to the pan in a single layer. Cook undisturbed, for 1 minute on each side, or until golden and cooked to your liking.
- Transfer to a serving platter, along with the cooked broccolini, and repeat with the remaining steak. Garnish with fresh parsley and lemon wedges.
